When you have left over pot roast...

make nachos!!! I love making pot roast because it is great as pot roast, but then you can also use the meat for many other dishes! Last week, I was craving nachos so we made a shredded beef (aka Pot Roast) nachos. There was very little work to making these. Make some queso with Velveeta and rotel, chop up some onions, dice an avocado, chop up a tomato, open salsa, jap's, and bean dip. Assemble and eat!!!
