Zucchini Boats

I can't find the recipe that i used for this, but it is fairly simple to make. These were really flavorful and tasty. There was one part that sucked while making them and it was when I had to scoop out the insides of the zucchini. It was not as easy as the recipe made it sound.


2 medium to large size zucchinis
1/2 onion
1/2 red bell pepper
2 garlic cloves
2 slices of panchetta chopped up (or use cooked bacon)
salt
pepper
Cajun seasoning
grated Parmesan cheese... i would guess about 1/4 cup

Heat oven to 350 degrees. Boil whole zucchini for 3 minutes. After taking out of boiling water let it cool down a bit then cut the zucchini in half


Now comes the part that made me cuss a lot. You are supposed to just take a spoon and scoop out the insides of the zucchini. This is easier than it sounds. I jacked up the first half and had my spoon go right through the zucchini. Hmpf. So on the next half I used a knife and cut down each side of the zucchini to make it easier for the spoon. This helped a bit but they still look like a 2 year old tried to mutilate the zucchini. Place the halves into a oven proof pan.

In a pan, saute the onion, red bell pepper, garlic and the insides of the zucchini. After about 5 minutes or so, sprinkle salt, pepper, and Cajun seasoning. You could also add any type of squash or mushrooms to the mix if you want a different variety of veggies. Once they are done cooking then scoop the mixture into the zucchini boats. Add grated Parmesan cheese to the top of the mixture then place in oven for about 15 or so minutes.
