I'm not a huge fan of fish but I am trying different ways to cook and marinade fish with the hopes that I'll start to like it! We tried this recipe the other night and it was SOOOO good! I didn't even need tartar sauce!

Dill Salmon Recipe

1 cup Dijon mustard
2/3 cup white wine or chicken broth
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 T soy sauce
1 cup vegetable oil
1/2 minced fresh dill
1 t teaspoon pepper
1 salmon fillet (1 inch thick and 3 pounds)

In a bowl, whisk the mustard, wine or broth, brown sugar, vinegar and soy sauce until well blended. Gradually whisk in oil. Stir in dill and pepper. Place salmon in a shallow glass dish and pour 2 cups of the marinade over salmon. Cover and refrigerate for 1 hour. Cover and refrigerate remaining marinade for basting.

Coat grill rack with nonstick cooking spray before starting grill. Drain and discard marinade. Place salmon, skin side down, on grill. Grill, covered, over medium hot heat for 5 minutes, then baste the fish. Grill 7-9 minutes longer or until fish flakes easily with a fork, basting occasionally.
