Vanessa threw Matt a surprise 30th birthday party on Friday night. She had it at Zax Pints and Plates. We haven't been there before, and it was pretty nice. We spent most of our time on the patio (thankfully it didn't rain!!) talking, drinking and eating. It was really cool since it wasn't extremely loud like some restaurants can be. We then headed to a different bar.... I think it was called J Black. It was okay, way to loud, crowded and way to frickin trendy. And by trendy I mean it appeared that people were hanging out there just to be seen. I missed the highlight of the night..... some random girl was throwing up while her ass was plastered on the glass door that our friends were sitting next to. I guess she was wearing a dress and it was hiked around her waist while she was leaning over throwing up. I know, gross, but I'm sure it was like a train wreck, really hard to take your eyes off of her. I SOOOOOO would have taken a picture if I was there :)

Recipe courtesy Giada De Laurentiis
4 skinless chicken breast halves, with ribs
2 skinless chicken thighs, with bones (I left these out)
1/2 teaspoon salt, plus 1 teaspoon
1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
1/4 cup olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 ounces prosciutto, chopped (I used bacon)
2 cloves garlic, chopped
1 (15-ounce) can diced tomatoes
1/2 cup white wine
1 tablespoon fresh thyme leaves (I used dry thyme)
1 teaspoon fresh oregano leaves (I used dry oregano)
1/2 cup chicken stock
2 tablespoons capers
1/4 cup chopped fresh flat-leaf parsley leaves (didn't have this either)
Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a heavy, large skillet, heat the olive oil over medium heat. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside.
Keeping the same pan over medium heat, add the peppers and prosciutto and cook until the peppers have browned and the prosciutto is crisp, about 5 minutes. Add the garlic and cook for 1 minute. Add the tomatoes, wine, and herbs. Using a wooden spoon, scrape the browned bits off the bottom of the pan. Return the chicken to the pan, add the stock, and bring the mixture to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes.
If serving immediately, add the capers and the parsley. Stir to combine and serve. If making ahead of time, transfer the chicken and sauce to a storage container, cool, and refrigerate. The next day, reheat the chicken to a simmer over medium heat. Stir in the capers and the parsley and serve.
This dish was pretty tasty. It seems like there is a lot of steps and ingredients but really, you only use one pan. There isn't much I would change to this dish except maybe to use boneless chicken breasts. My dumb ass accidently threw away the chicken thighs so I only used the bone in breasts.

Well I don't. I think I am the queen of procrastination...No, I know I am the queen of procrastination. What is wrong with me? It is almost like I enjoy the stress and constant weight of worry. I had today off, so I woke up thinking that I needed to do the paper for school that was due yesterday. Yes, it was due yesterday. The teacher doesn't count off for papers a day late so of course, I wait until it is a day late. So, it is 8:15pm and I still haven't done my paper. Now, I have done plenty of other stuff today... grocery shop, Target, cleaned bathroom and vacuumed the house, walked the dogs (which is my exercise), did laundry, watched a little TV and made us a nice dinner. So, it's not like I did nothing today, but I have been ignoring my homework. I realize that I would be soooo much happier if I had actually done my homework yesterday or this morning. But noooooooooooooooooooooo............... I wait until the last frickin minute to write a paper about the supply chain differences between business to business and business to consumer. Really interesting topic.... NOT!
Yes, I still have a paper due tonight but I chose to write about not writing my paper instead. Makes sense.. right? :) I tried to get Jim to write my paper for me, but he said no. Damn him... why did I get married? I thought I did so that my hubby would do all of the stuff that I didn't want to do like kill spiders, change my oil, do my homework.
I suppose I should turn off all of my fun websites and go to my school website but I don't wanna! Okay, I'm going........ right now........ Hmmmmm, the dogs look like they need their toenails trimmed, maybe I should do that now. Ya know.. just in case they scratch us... should trim them now, then I'll do my homework.

The ladies headed out on Saturday night! The night started with a kick ass taxi ride. The taxi was equipped with TV's and a jukebox, so you could listed to what ever you wanted. It was so much fun.... so the next time we head downtown, we'll be calling this guy! We started kind of slow hanging out on the patio at Maggie Maes, then we headed to a couple of other bars. We ended up at Friends where the night got a little crazy :) We danced, we took shots, we danced again but this time on the bar, and then we posed for the camera!! We may be getting older, but we can still party like it is 1999!!

Our friends, Jason and Ashely, recently moved back to Austin. They spend the last 2 1/2 years living in Australia. Regrettably we weren't able to visit them while they were living over there. I wish we did, but it is a very expensive trip. But now they are back, which makes Jim really happy. He has known Jason since they were wee little kids and have always kept in touch over the years. Most of Jim's friends are from grade and high school. Lucky for me, they are all great guys so I don't have to deal with any "jackass' friends :)
We went to dinner at Cheesecake Factory, which is always tasty, and then we headed over to Iron Cactus for some drinks. We went to the Iron Cactus up north where we met up with John and Tammy, and I'm glad we did. We have eaten there a couple of times but we never went their for drinks. They had AWESOME drink specials. If I remember correctly, it was $5.50 Mexican Martinis, $2.75 beer, $3.50 well drinks, and $3.50 Crown drinks. Very good for a Friday night! It appears that they have good specials every night of the week. Iron Cactus has a large patio off the back of the restaurant that has a private feeling (not right next to a street or parking lot). I highly recommend it!

I noticed a couple of cute little creatures in the back yard tonight. So course, I ran outside with my camera. I love our cute little frogs that live in our yard. I saw 3 in the immediate area, one was freaked out by me and hopped away and the other two were just checking me out. When I was taking a picture of one of the frogs, I noticed a gecko on the wall. At least I think it is a gecko.
